Parmesan Chicken

This is a favorite at our house. It comes from Barefoot Contessa.

4 - 6 boneless skinless chicken breasts (butterfly and pound to 1/4 inch thick)

combine on plate
1 C flour
1 t salt
1/2 t pepper

combine on 2nd plate
2 lg eggs
1 T water

combine on 3rd plate
1 1/4 C seasoned bread crumbs
1/2 C grated parmesan cheese
1/2 t garlic salt

Coat chicken in flour, then eggs, then bread crumbs and cheese mixture. Heat 1 T butter and 1 T olive oil in pan. Make sure pan is nice and hot before adding chicken. Cook chicken 2 - 3 min on each side. Keep warm in a 150 degree oven until ready to serve.

I forgot to mention that you might want to put some plastic wrap over the chicken before you pound it. Unless you want chicken juices flying all over your kitchen. yuck!

I made this several weeks ago and it was yummy! I have tried to leave a comment several times and could never get on here...sorry it took me so long to get it right with the passwords and everything.
